Abstract Bananas and cantaloupe are two fruits that can be found in Indonesia very easy to get at affordable prices even grown alone. These a good combination if processed new ways, one of which is the form smoothies. This study aims determine consumer assessment organoleptic quality beverages smoothies Ambon bananas cantaloupe. The method used this was perform an test on panelists using Hedonic Test by giving 3 drink samples with variations amount different fruit extracts untrained panelists. criteria tested included color, aroma, taste, texture overall so best formulation produced from several treatments. scoring scores were 1=Very Disliked, 2=Disliked, 3=Liked, 4=Very Liked. Results, F1 panelist’s most preferred formula terms F2 F3 panelists’ texture, Overall, treatment 100 ml ratio 1:1:1 or between bananas, low-fat milk. taste resulting neither bitter nor astringent.
